The puff pastry looks home-made, but inside is a wheat and pea-based protein and rich mushroom duxelle.

So what makes a salmon alternative?
Here, it’s jackfruit, soya and oyster mushrooms stepping into the breach, wrapped in vegan puff pastry and layered with white sauce.
